An Inside Guide to Food Trucks at the Silos

If you’ve been following along on our social media over the past few months, you’ve probably seen our Food Truck Friday feature! We’ve been spotlighting the food trucks on our grounds one at a time and sharing their stories and some of our favorite menu items.

We want to be sure you have the full scoop on what you can do, see and eat when you come visit the Market here in Waco. So, we compiled all of the info we’ve been sharing on social media into one blog post to serve as an inside guide to the food trucks at the Silos.

We know we’re partial, but we happen to have some of the best local eats in town right here on our grounds. So no need to go too far, just read on and you’ll be ready to jump right in as soon as you get here.


Grilled cheese truly never tasted so good. This is a truck that is loved by the whole city of Waco, which means you’ll normally see quite a few locals gathered around this one waiting for their order. (No worries, they’re quick.) They also serve up mac ‘n cheese and seasonal soup, because what goes better with a grilled cheese than more cheese and soup?

H O U R S   | 11:00am – 5pm, Monday – Thursday and 10am – 5pm, Friday – Saturday

P R O   T I P   | They offer a sandwich/mac ‘n cheese combo deal for those who can’t (understandably) limit themselves to just one option.



HOMEMADE BISCUITS. Need we say more? Milo Biscuit company is known for their biscuits, jams and biscuit sandwiches – but why stop there? They also make burgers, veggie bowls and more. Our favorite sandwich is the “Sic ‘Em on a Chicken” which features chicken fried in sweet tea…who can pass up on that?

H O U R S  | 10am – 3pm, Monday – Friday and 9am – 3pm  Saturday

P R O   T I P   | Their side options are equally as delicious as their entrees – you’ll want to try them all. But, you can never go wrong with their truffle fries.



This one is maybe our most unique on the grounds. Looking for something out of the ordinary? This is your first stop. And don’t be fooled by the name—they’re an Asian Fusion food truck that doesn’t exactly sell sandwiches. They specialize in what they call Trashcan Bowls: a bed of rice covered in your meat of choice, veggies and drizzled with one of their signature sauces. This is actually one of Jo’s favorite lunch spots! She likes the Trashcan Rice Bowl with chicken and cilantro lime AND sriracha ranch sauces.

P R O   T I P   | Take notes from Jo and combine two sauces!



This is the option we can just about guarantee everyone in the family will love. A little fun fact about 900 Degrees—they source their ingredients from Italy! And, as the name suggests, their pizzas are cooked in a wood fired oven INSIDE the food truck. And the logs outside of the food truck aren’t just for decoration, they actually fuel the fire that cooks your pizza.

H O U R S  | 11am – 3pm, Monday – Thursday and 11am – 4pm Friday – Saturday

P R O   T I P   | If you can catch it, the “s’mores pizza” is the best dessert pizza we’ve ever had! Keep tabs on their social media accounts to find out when they’re serving it.



Want to try a true local staple? Vitek’s is your place. This barbecue joint is actually famous for its signature dish: the Gut Pak. They recently received the “Best College Eats” title from the Cooking Channel for this menu item! It features a combination of hand-chopped brisket, sausage, beans, pickles, onions, and jalapenos piled high onto a bowl of Fritos. And it just so happens to be one of Chip’s favorite lunch spots.

H O U R S  | 11am – 4pm, Tuesday – Saturday

P R O   T I P   | This is currently our only truck on the grounds that brews fresh sweet and unsweet tea.



This crepe stand has been a huge hit in Waco ever since their days at the local Waco Farmer’s Market—which is where they got their start before coming to the Silos. For those who have never tried a crepe before, think of it like a thin pancake that holds all kinds of toppings inside…like the tortilla of a taco. Their strawberries and Nutella crepe is a classic favorite, but they also have lunch options, like a savory crepe with turkey, tomatoes, pesto, mozzarella and balsamic reduction all wrapped up in a warm crepe.

H O U R S  |10am – 4pm, Monday – Thursday and 9am – 5pm, Friday – Saturday

P R O   T I P   | You can build your own! No matter what you’re in the mood for, you can find it or create it at Co-Town Crepes.



Chuck’s Gourmet Popcorn has a popcorn flavor for every mood. Best part: you can easily tie it closed and take it to-go. They have everything from classic Kettle Corn popcorn to gourmet flavors like Cinnamon Toast popcorn. Their menu is simple and sweet, and it doesn’t need any frills to make it one of our favorites. We think the Cinnamon Toast flavor hits the spot every time.

H O U R S  | 10am – 4pm, Monday – Thursday and 10am – 5pm, Friday- Saturday

P R O   T I P   | This is a great treat to take with you on the go, so if you want to experience the food truck scene but don’t have time to sit down, this is a great option for you!



Luna Juice bar is a food truck that serves up fresh-pressed juices and smoothies that are refreshing on a hot day. They have all kinds of fresh blends. Don’t like green juice? No problem…they’ve got flavors even your kiddos will love. But our favorite is the Blended Watermelon juice. It’s a sweet summer special served up in a personal-sized watermelon, and it is easily the most Instagrammable menu item in all of our food trucks.

P R O   T I P   | If you get the chance to meet the owner, Summer, ask her about the mission behind Luna Juice Bar. We love working with such inspiring people!



Common Grounds is a food truck satellite that has its original storefront here in Waco. We love this place, and the fact that they’re now right here on our grounds is the cherry on top. (You’d better believe we’re always caffeinated.) If you’re in town checking them out, we suggest their iced No-Bull. It’s one that’ll give you a boost and get you ready to take on a full day of exploring Waco.

H O U R S  |  10am – 5pm, Monday – Thursday and  9am – 5pm, Friday – Saturday

P R O   T I P   | They regularly add seasonal items to the menu that includes everything from their own mint mocha latte to a lemon lavender fizz. Yum!



The Heart of Texas Dog House (i.e the HOT dog house…we love it.) serves up gourmet hot dogs, sausages and bratwurst. They make every kind of gourmet option you can think of. But our personal favorite is the BLT hot dog—which is a hot dog wrapped in bacon served with tomatoes and lettuce and drizzled with peppercorn ranch. Now that’s a hot dog.

H O U R S  | 10am – 6pm, Monday – Saturday

P R O   T I P   | If you’re looking for something gluten-free at the Silos, they have a chili bowl “Dog Pile” option for you!


And now for our “frozen” food trucks! For the summer season we have a couple chilled treats to keep you refreshed and cool while you’re at the Silos. So if you thought you were full after all of those meals, you’d better make room.



Heritage Creamery is quite possibly the cutest little ice-cream van we’ve ever seen. Their ice-cream flavors vary from Texas Pecan Praline to a Watermelon Mint Blueberry Sorbet. Heritage uses as many locally sourced products as possible—which we love! Flavors change just about daily, because they’re always whipping up a batch of something new and different, so if you’ve tried it before, you’d be wise to go back for seconds. Odds are—you’ll find something you love that wasn’t there before.

P R O   T I P   | Heritage has weekday specials on their website…and who doesn’t love a deal?!



Steel City Pops is a popsicle stand that serves up classic and specialty popsicles…and these aren’t just the boxed popsicles from your freezer. These are gourmet and so good. The kids particularly love Steel City, but this is a favorite dessert of all ages. If you want a flavor recommendation, strawberry cream is a personal favorite of ours when it’s on the menu! Their flavors change daily, so check out their social media for their most updated offerings.

H O U R S | 10:30am-6pm, Tuesday-Saturday

P R O   T I P   | Lactose Intolerant? Steel City has dairy-free options.



Does anything take you back to childhood quite like a snow cone? When it gets as hot as it does in Texas, these things really hit the spot. Since their only here for the summer, you’d better believe we’ll be here every weekend getting our fill. They have all the classic flavors you’ll love so come on!

P R O   T I P   | Mixing flavors is ALWAYS an option.

After reading all of that, you’re now officially prepped and ready for a Silos food truck experience. Just wear your elastic waistband and come hungry! Once you’ve got your meal (or meals) picked out, grab a shady spot under the barn or at one of our picnic tables and enjoy. And on your way out, remember to grab a box of cupcakes. We know you feel like you’ll never be hungry again, but trust us, this is a to-go treat worth picking up.

    My point of view from France...
    I observe that if in the HGVC's Fix Upper episodes, Chip & Joanna speak often about French way of life , design and architecture, even about French cooking, there's not yet a French Food, Wines & Backery Truck in the galore. It's a main forgot!
    Too bad for Texan visitors and friends from everywhere around in the neighborhood.

    We have been to the Silos the the last 2 days. What a treat to come here. We have enjoyed the store, bought tons of stuff for home, had the Trashcan lunch, it is awesome, cupcakes of course, yummy. It is such a fun place. Thanks for the fun and the memories. We will miss you two dearly on TV on Tuesdays. 😭 All the best to you. Mr. & Mrs. G, from NH, it was a long ride!

    My husband and I are doing a road trip from California to Waco and we are leaving Sept 30. I have been planning this trip for 4 months, I am so excited! We will definitely hit the food trucks while there. Vitek's and Heritage Creamery will certainly be two of which we try. But also so looking forward to Magnolia Market, the Silos, and the bakery as well as the other places there in Waco I have planned for us. God bless you all!

    We absolutely enjoy our experience every time we come. We visit are still making our way through trying all the food trucks.

    So far we go to the bakery every trip for sweet and savory treats. We've enjoyed the asian fusion, Heritage Creamery, Common Grounds, Milo's, and the Homestead Cafe in town. We discovered all of these because of Magnolia Market.

    Thanks for introducing Waco to us. We really enjoy visiting, and discovering new places in town and at Baylor Univ..

    I look forward to ordering another subscription of the magazine. It was a joy to read and think about what was shared.
